Pan Roasted Duck Breast
A quick and simple way to prepare duck breasts. The duck is seared in a cast iron pan and then baked in the oven. You can cook potatoes and rosemary in the remaining fat for a delicious side dish.

Instructions
  1. Preheat oven to 400, and preheat cast iron skillet to medium.
  2. Pat the breasts dry with a towel and score the skin, exposing the fat and making a crosshatched pattern. Sprinkle both sides with salt and pepper.
  3. Place breasts, skin side down, on heated skillet. The fat will render in about 6 minutes.
  4. Turn the breasts over and cook for one minute.
  5. Flip breasts again, so the fat side is down, and put skillet in the oven. Bake for 7-9 minutes (or until the meat is done.)
  6. Combine wine, chicken stock, honey and orange juice in a small pot and simmer until reduced by half.
  7. When the duck is done, return the pan to the stove top. Set the duck aside, and add the (already cooked) potatoes and rosemary.
  8. Drizzle sauce over duck and potatoes and enjoy!
