Wagyu Beef, one of the most sought-after meats in the world, is our specialty at Quarry Hill Farm. When our family decided to get into the farming business with the mission of feeding the hungry in our local community, we also wanted to provide ethically raised, high-quality beef, poultry, eggs and produce to the surrounding area. To help achieve our goal we meticulously researched which breeds of cattle would allow us to fulfill this mission; all while employing sustainable farming practices.  In short, we wanted Quarry Hill Farms to be positioned to provide the best of the best to our community and customers.  We believe we have succeeded in that goal.

What is Wagyu Beef?

Wagyu Beef is a premium, highly sought-after Japanese cattle breed. Wagyu, literally, translates to Japanese Cow. Wagyu cattle were originally bred as draft animals and were used in agriculture due to their physical endurance.  Through generations of specific breeding to develop the best draft animals, Japanese Wagyu developed more intra-muscular fat, which the animals used for energy and endurance.  The unintended, but now sought-after, result was that Wagyu developed the mostly finely, yet concentrated, ‘marbling’ in the meat of any beef product.   This “marbling” effect is what creates the smooth buttery texture, and unparalleled flavor, which Wagyu beef is known for.  Wagyu is always the highest-priced, and most exclusive beef in every premier steakhouse and butcher shop on the world.  Through our breeding program and sustainable practices, Quarry Hill Farm can bring that heritage, quality and exclusivity of Wagyu Beef to you, our customer.

Why should I eat Wagyu?

Due to the marbling effect, Wagyu beef has a rich tenderness that in unparalleled in other cattle breeds. Numerous studies have shown that not only is Wagyu beef delicious and tender, but it is healthier for you as that other beef. You may ask “How can beef be good for me…”, and the answer is that Wagyu beef has a higher mono-unsaturated to saturated fat ratio than other beef breeds. Not only that, but the saturated fat that is found in Wagyu beef contains stearic acid, which has been shown to have a minimal impact on cholesterol levels.

David Perlman and the staff at Quarry Hill Farms have researched American Wagyu been and selected cattle with some the most pure and delicious bloodlines in the country. He also decided that in order to maintain the highest quality animals for years to come, he would breed and raise his Wagyu cattle on a sustainable operated and managed farm in Harleysville, PA. Through this research, Quarry Hill Farm has consulted with and retained experts to ensure that the cattle is bred and raised ethically, thoughtfully, and with the utmost care. These animals are not only part of the Quarry Hill Farm Family, they are part of David’s family; and they are treated as such.
